Molecular gastronomy is a new scientific field (first coined in 1988) that uses traditional physical and chemical methods to understand the processes, which occur during the cooking of food. The field has also attracted cooks and gastronomists that have realised that an increased understanding of these processes can significantly enhance the taste of the food.
